Which made me curious to know how many people actually grow their own vegetables. And how many organic farms there are around. So I went digging around (excuse the pun) and found that has been a HUGE increase in home food gardening in the last decade. 35% of all households in America, or 42 million households, are growing food at home or in a community garden. That’s an increase of 17% in the past 5 years alone. And the fastest growing demographic in the population? Millennials (ages 18-34) are the fastest growing segment of the population. There’s an interesting report about the phenom by the National Gardening Association .. But now let’s get back to that zucchini on the porch – Ever made a “Mock Apple Pie”? It’s what we do when there’s too much zucchini from the garden and it’s unbelievably delicious and tastes like apple pie…here’s a hint; make sure the zucchini is soft enough your fingernail breaks through the skin and peel every last bit of “green skin” and no one will know they’re not apples!
